Lilac Simple Syrup + Canning instructions

This lilac simple syrup turned out so good and is going to be a great addition to our canning pantry. It is simple to make, fast to can if you wish and will make a great addition to cocktails, mocktails or as a flavoring for kombucha or lemonade.
Lilac Simple Syrup Recipe:
3 cups sugar
3 cups water
6 cups lilac florets
2 tbsp lemon juice
Simmer sugar and water until sugar has dissolved. Add lilac florets and continue to simmer for 2 minutes, then remove from heat. Allow the simple syrup to steep for at least 2 hours, or until it has reached your desired flavor. I steeped it for 4 hours. Strain and stir in lemon juice. Will last in the fridge for at least 2 weeks.
Canning Instructions:
Please note this is not a tested recipe, but it is high acid from the sugar and lemon juice. Bottled lemon juice is recommend in any canning recipe that calls for lemon juice to guarantee acidity, but again, with the sugar in this recipe I am using the lemon juice purely for flavor, so fresh works too.
Fill 1/2 pint jars to 1/4 inch headspace. Wipe rims with vinegar or hot water, add lids and rings to finger tip tight. Process in a waterbath canner for 10 minutes, adjusting for elevation if above 1000ft.
