Hi David. As a Mainer I want to point out a couple of tips that might help you in the future with Maine seafood. The clams you ate are called Steamers. The Sand that you tasted is because you didn’t take the cap off. It is like a gray/black hood of the black part of the clam. Once cleaned, try them in melted butter.
On the lobster we always remove the “poop shoot”. Peel back the top of the lobster tail and remove the black string. It will all come out as one piece of you start from the top.
