LOL never ask a farmer in the months of July and August if he still loves his profession. That abundance is what we pray for in the spring but it it’s really a lot to deal with tomatoes, eggplant, green peppers, livestock and everything else at this point in the summer when pest pressure is high. I’m still dealing with potatoes and soon the sweet potatoes. People that know me, know that in the months of July and August I will be choosing very carefully what I do outside the Homestead. I am active in my church also, choir, Hispanic ministry, cantor, sacramental prep so some weeks I don’t even start my car if it’s not to go to mass or maybe Tractor Supply. You are doing so great, thank you for all you share.

Great ideas. When I was able to do a garden myself I asked and was told I was able to bring fresh stuff in for my churches food pantry for the needy. Thanks for your time and work bringing us your life and educating us. God Bless

Love this. Great information. I literally will throw the entire tomatoes into a ziplock and freeze them. Can add to the bag as I go it’s not full too. Literally the easiest thing ever!! Annnd the skins completely slip right off anyway, no blanching necessary, it’s great. If folks want an even easier time later, simply core tomatoes (cut stem end out is all I do, I don’t care about the seeds and gel), pop them in freezer bags till ready to process, defrost, pop off skin and voila! I will NEVER blanch another tomato! I did two full bushels in one day yesterday. Now I just do them as whole (slightly squish them in the jar a bit) tomatoes, nothing fancy, just a bit of salt. No need to add water if you just squish them a bit in the jar, they’ll make their own juice. Now I can make it into whatever I want through winter! Love it! God Bless ~Lisa

Couldn’t agree more with freezing. I grow over 100 tomato plants each year and I freeze most of them. This allows us to process them in the winter and save time for all the other things to do at seasons end. When you thaw them out, at least 1/3 of the water is removed and this saves a lot of time on cooking them down. Great stuff here, a Pre-congrats on the upcoming 100k subs!!!!

Don't forget dehydrating! I use this mostly with cherry tomatoes, but it works great for any type. It's especially nice when you don't have enough to justify canning (3 or 4 tomatoes left over after your salsa batch is done)

I just slice them in half or quarters and throw them in in the dehydrator, and dry them extremely well. I keep some as slices - you can toss them in soups, etc. Some I grind down into tomato powder. It can be rehydrated into paste, juice, sauce, etc and takes up almost no room in the pantry.

If you are going to freeze the blended tomatoes in the quart bags, it works real well to fill the bag about half way, get as much air out as you seal it shut, then put it on a cookie sheet. Been doing my tomatoes like this for years. Got the idea originally from MOTHER EARTH NEWS.

Good idea to go ahead and make my salsa. I just blanched a bunch of tomatoes yesterday. My least favorite thing is to get the skin off.

When I run out of time I just put them in a freezer bags as is and freeze. Great for sauce or stews.

My grandmother gave me a very old kitchen tool called Squeezo, I believe, you put whole tomatoes in and crank it to separate skin and seeds from the juice. It takes a lot of work out of making juice

Have you ever tried a grapefruit spoon or even just a regular tea spoon to get the center out of the Roma’s? Super quick, and safer since I am a little accident prone. And kids can help!

I’m sorry, I might be overlooking something here, but why core the tomatoes? I’ve never done that. Especially when we make Salsa. Also, what did you do with the cores? Compost, pig food?Just curious, no debates here.
Love your ideas about freezing them.

LOL this is too coincidental, I have been working on putting up tomatoes today. I have never canned my tomatoes, I have always froze them and pulled them out of the freezer as I need them. I do it even simpler than you, I cut the stem top off, These are Roma tomatoes and freeze them whole. NO Blanching! Yes they take up a lot of room in the freezer but I have the space right now. When I take them out to use them you allow them to slightly thaw and they squeeze right out of their skins. This year I plan on making sauce but dealing with picking beans and putting them up and dealing with making pickles and relish, I don't have time to process my tomatoes right now. So in the freezer they go! Thanks for sharing.
