All memes aside, do not cut on any countertop unless it's specifically designed to double as a cutting surface. When treated properly, wooden boards will actually regenerate and fill in the cuts created by your knife. Wood is also very gentle on your knife's edge unlike glass, ceramic, or god forbid, metal. Lastly, you really only want to use a plastic cutting board for raw meats, fish, or poultry to avoid cross contamination. For everything else, you should be using wood.

Although if it was an apartment style where it’s 4 rooms, 2 bathrooms, n 1 kitchen/living space, then that makes sense. I stayed in this style dorm for a few years, but other years was a smaller standard dorm with a shared bath.

On the other side of the spectrum, I collected a massive set of different cooking stuff in uni.
A mortar/pestle, a pressure cooker, an air fryer, a sous vide cooker, a bread machine, a pizza stone, an immersion blender, a spherification extruder, instant read thermometer, several cutting boards, half a dozen knives, etc.
Was it overkill? Absolutely. But cooking is my hobby, and I can't practice it when I'm living up in northern canada at a mine for work, so I make the most of it when I'm down south.

A wooden cutting board is great. Back in the old days, people thought the grooves in the wood would hold bacteria forever and be unsanitary, but turns out, wood is naturally antibacterial and it's actually plastic that's been scored by a knife that holds bacteria for longer. On the other hand, plastic can be put into a dishwasher, whereas wood cannot, but plastic will dull your knife edge faster as well due to how sturdy it is, while wood has a bit of 'give' to it and is more forgiving on the blade. (obviously depends on the type of plastic and wood, glass and rubber cutting boards also exist and affect a blade how you'd think.)

Also, I like her theory about microplastics, dunno how true, but decent thing to consider.

Also, if you wash something with garlic on it, you can risk baking it into the surface or your hands, etc. Perhaps she tried to clean garlic off with hot water after chopping it and that's why she could still taste it? Well done having such a sensitive nose/sense of taste.

I have polished granite slab counter tops for that exact reason. I can chop everything where I'm cooking and simply wipe down / clean the area after. Nothing seeps in so no flavor mix and cleaning is super easy.
