RECIPE (4-5 servings, 30min prep time):
Dressing:
-a bunch of parsley and basil
-2 cloves garlic
-1 shallot
-3 Tbsp olive oil
-3 Tbsp nuts of your choice
-1 Tbsp lemon juice
-1 Tbsp maple syrup
-salt and pepper to taste
-water to thin
Blend until creamy.
-250g pasta
Cook according to the packaging instructions.
-400g veggies of your choice (I used zucchini, asparagus and snap peas)
Sauté in oil and season with salt and pepper.
-200g tofu
Fry in oil until crispy and slice.
-100h chopped jarred artichokes
-two handful of arugula
Assemble everything in a bowl and mix well.
Store in the fridge up to 3 days.
