This is what happens when you sharpen any dull knife. Metal is removed so that a new edge is formed.
On more traditional sharpening stones or even diamond sharpeners, the same thing happens but the metal removed is in the form of fine powder that we wash away with water or oil.

2 different videos. 2 different knives.
1st knife has pointy end. The one slowmo has a straight end. Plus the chunks from closeup are pretty big you would see them on the 1st part.
