In this video I'll show you my whole snapper recipe for the Weber Kettle.

Whether it be grilling, smoking, low n slow, how to videos or just your basics of BBQ, my aim is to help you along your BBQ journey. So make sure you have hit the subscribe and bell buttons, that way you can be reminded every time I upload new videos.

With 30 years of experience cooking on Weber grills, you are getting my knowledge compacted into small weekly videos. These techniques work and I know this, as it is how I have been cooking on these BBQ’s for three decades.

There is so much wrong information out there and my aim with all of my videos is to help you Master Your Grill by sharing my knowledge and experience and passing on actual practices that are tried and tested, not just copied.

Snapper is an absolute favorite of mine.

To prep the fish, make sure it is scaled, gutted and washed.

Now cover it with olive oil inside and out.

Put in the cavity of the fish, any herbs you like, I used thyme and rosemary.

Then add crushed garlic, one to two cloves is enough.

Then add some unsalted butter, two to three tablespoons is a good amount.

Now add half a lemon sliced.

Season the outside with salt flakes, coarsely ground black pepper and garlic powder.

Now roast at 230c (450f) for at least 20 minutes or until the internal temp is 63c (145f), at this point the flesh should flake when pulled with a fork

All that is left to do is squeeze over the other half of the lemon s juice.

Eat and enjoy.

Cheers.

I did this on the Weber kettle last night for my family. Got 2 pink snapper on there. Was my first time cooking fish on the Weber, so I was a bit nervous. So I followed your video. Was an absolute smash hit!! Loved it! Thanks so much!

Great video! Just wondering could I cook 2 x 2kg fish side by side on the one kettle or is it better to cook them individually? Will cooking 2 affect the cooking time?

Judging on the mouthful size. I think your closer to a 3-4 beer cooking time🤗

Awesome recipe and method. I'll be keen to try this one. On another note though your videos look super cool, very professional, but the audio needs attention...please fix all the breathing sounds it makes it feel very unprofessional and doesn't match the rest of your video. Overall great channel!
