Ingredients
• 6 red bell peppers
• 200 grams of farmer’s cheese
• 1/3 cup of grated walnuts
• 1/2 tbsp of fresh minced garlic
• Salt and pepper to taste
• 1 tsp of smoked paprika
• 1 tbsp of fresh chopped basil leaves
• 2-3 tbsp of grated Parmesan
• 2 tbsp of yogurt
• Balsamic glaze for drizzle
• Basil leaves for garnish
Instructions
1. Roast the Bell Peppers:
• Roast the red bell peppers until their skins are charred and blistered.
• Allow the peppers to cool down.
• Peel off the skins and remove the seeds.
• Slice the peppers into even ribbons.
2. Prepare the Cheese Mixture:
• In a mixing bowl, combine the farmer’s cheese, grated walnuts, yogurt, minced garlic, salt, pepper, smoked paprika, chopped basil, and grated Parmesan.
• Mix until well combined.
3. Assemble the Rolls:
• Place a small amount of the cheese mixture on one end of a roasted pepper ribbon.
• Roll the pepper ribbon around the cheese mixture to form a roll.
• Repeat with the remaining pepper ribbons and cheese mixture.
4. Serve:
• Arrange the rolls on a serving plate.
• Drizzle them with balsamic glaze.
• Garnish with fresh basil leaves.
