Dough Recipe

1000g Caputo Pizzeria
600g Water
25g Salt
1g Instant Yeast

Mix and rest for total 8 to 9 hours at room temp with 1 stretch and fold after the first hour

Divide into 260g balls and proof for 4 to 5 hours at room temp
