they are both amazing, I think I like the stencil one best because it is so elegant, but it is really impossible to choose!
I think the mosaic could be fun to do on a sugar cookie with little pieces of royal icing! I might give that a go!

Each one is interesting in their own way. I like the paper flowers ides. I am going to the website now to take a look at them. I can use them instead of buttercream flowers because I am terrible at making flowers. My buttercream flowers either run or crumble. I recently used your idea of using a bit of heavy cream to adjust the texture of the buttercream and it worked well.
