Bake at 350 deg F. for 30 – 40 mins

For the dough –
1 cup flour
1 cup water
½ cup unsalted butter or 8 tbsp.
1/4 tsp salt or 1 tbsp sugar for a sweet puff
4 large eggs at room temp or 5 small

For the filling-
1 ½ cups cheese – cheddar or pepper jack
1 tbsp. grated butter
1/2 tsp lime pepper sauce- found under condiments
2 tbsp mayo
1 tsp Dijon mustard

eggwash - beat 1 egg with 2 tsp water

I finally got around to making these and I'm so happy with the result. You explained everything well in the video, the recipe was easy to follow and my puffs came out great. The color of them after 35 mins at 350 F was absolutely perfect and pretty. Now to see if my picky child who didn't grow up in T&T will eat it. Thank you Natasha!

I made these for the first time,
To carter for a baby shower event...

Let me tell you! It was a hit.. it was light, it was filled with air and so fluffy. Everyone loved it.
Tip - when you put your puffs into the oven to bake, do not open the oven to check on it until its finished.
By opening the oven your puffs will surely collapse.
No if no buts no maybe, I'm telling you they will collapse.
Do not open the oven until its time to take out.
I took out my puffs exactly at 33minutes and they were perfect.
I made these 3 days in a row, and all attempts were perfect...

Great recipe I made it yesterday was so delicious I added a little cream cheese to the cheese filling and it was so light and wonderful 😋
