Winds Determine Runway to Use

Just started learning, how does the wind effect left turn patterns ? With one runway I can not see any video that shows the patterns for fly in /landing with wind in both directions of the runway ?

How do you determine which direction to use the compass which determines the wind direction ? In this example, the runways do not align with the compass.

What does "wind from" mean? Like "from the north", is that from the north heading south?
