I like ur building stile, you gave some cool ideas. The stove above the forge I used Gabbro Smooth Stone, it looks like is metal sheet.

I prefer option B -- dirt and stacked thatch. You might also consider utilizing the Carpenter's Blocks covers to make it look like the thatch is on top of the floor.
