Smoked Bacon-Wrapped Onion Rings

These bacon-wrapped onion rings are incredible when prepared on your smoker! These make great appetizers They can also be an awesome topping on a burger!
Ingredients:
2 large yellow (or vidalia) onions
1 pound sliced bacon (thin or regular...you won’t need thick-cut for this recipe)
Your favorite pork rub
Sweet & Spicy BBQ Sauce
Peel the onions and slice them into ¾ inch rings. Keep the rings in groups of two (so they fit together and create a thicker ring).
Wrap the bacon around the ring. If needed, you might use a toothpick to hold the bacon in place.
Sprinkle on a little of your favorite pork rub.
Place on the smoker at 275 degrees. Cook until bacon is at your preferred crispiness level.
Remove from the smoker. Drizzle on a little BBQ sauce and enjoy!
