Salmon w/ Brussels Sprouts & Sweet Potato 🐟🌱🍠

Another quick, healthy, and flavorful dinner! This combination is one of my favorites, and the dressing helps bring it all together. The air fryer has been a huge help lately, and I definitely plan to keep using it more. Enjoy!
Servings: 2-4
Ingredients:
-1 lb salmon
-1 lb Brussels sprouts, de-stemmed and halved
-1 lb sweet potato, medium diced
-salt and pepper to taste
-avocado oil for cooking
Garlic Dijon Dressing:
-1/3 cup olive oil
-juice of half a lemon
-2 tbs honey
-1 tbs dijon mustard
-1/2 tsp salt
-1/2 tsp black pepper
-1/2 tsp red chili flakes
Instructions:
-add the brussels sprouts into a mixing bowl and add oil, salt, and pepper; mix well and air fry at 400F for 25 minutes
-do the same as above for the sweet potato
-add the dressing ingredients into a container, mix well, and set aside
-set a nonstick pan or skillet on medium heat and add 3 tbs oil
-season the salmon with salt and pepper
-sear both sides of the salmon until golden brown and internal temp is 145F
-plate the dish and drizzle with dressing
-enjoy!
