✨Pistachio Pesto🌿✨
Bright green pesto with the delicate flavour of pistachios paired with fresh basil😻 You can substitute the pistachios with any nut you’d like! Here’s what you’ll need to make this pesto at home☺️
2 cups Basil leaves
1/4th cup pistachios- lightly toasted
Salt & pepper to taste
3 cloves of garlic- roughly chopped
2 Tablespoons grated Parmesan cheese or cheese of your choice
1/2 Tablespoon lime juice
3-4 Tablespoons of olive oil depending on what consistency you want ( I put 3 Tablespoons)
Process:
• Blanch the basil- add it to a pot of boiling hot water for 30 seconds & immediately transfer to an ice water bath to stop it from cooking- this step is optional you can choose to add the basil in the blender directly
• Slightly toast the nuts and add them to a jar with salt, pepper, garlic & cheese
• Blend till the nuts break down
• Squeeze the water out of the basil really well and add it to the mixer jar- blend till the basil breaks down
• Finish with lime juice & olive oil and blend till you reach the desired consistency- I like to keep the pesto a bit on the coarse side
• For keeping it green longer- add some plastic wrap, cover the container/bowl with foil and refrigerate
• Enjoy in pasta on toast with eggs, anything you’d like☺️
