What happens when you eliminate cooking it in hot water and it just goes straight to frying them?

Can anyone explain? What makes this recipe very airy and fluffy fishballs compared to most? I can't figure it out.

Hi, you have a different style of cooking. Just wondering what was the reason why do you have to put all of them into the water, then boil before frying. Just curious. Thanks

Cold water po ba yung first bowl where you put the fishballs? And after poaching po do you let it chill before frying? TIA po sa reply. God bless!
