Do you know the story behind Coronation Chicken?
70 years ago, Elizabeth ll became Queen and to celebrate her Coronation in 1953 this recipe was concocted. Obviously it's a little different today and here's how you can make an easy version:

Ingredients:
1 chicken breast
Salt and pepper
Olive oil
1/2 Bell pepper
1 large spring onion
A few dried apricots
3 tbsp Mayonnaise
1 tbsp yoghurt
1 tbsp mango chutney
2 tbsp curry powder
1 loaf white bread
Butter to spread

Method:
Slice chicken breast into thinner fillets.
Season with salt, pepper and olive oil.
Airfry for 15 mins at 185° or pan fry until cooked.
Heat up a pan and roast the curry powder until aromatic. (Be careful not to burn it).
In a bowl mix the Mayonnaise, yoghurt, curry powder and mango chutney.
Then add finely diced bell pepper, spring onion and apricots.
Dice the cooked chicken breast and add to the mix.
Butter slices of white bread and dollop 2 spoonfulls of the Coronation mix.
Spread out and sandwich with another slice of bread.
Cut off the edges and slice into rectangular thirds for the perfect finger tea sandwiches.
