4 large potatoes (Russet)
- 1 tsp Sea salt
- 1 tsp Gochugaru or crushed chili
- 1 tsp Oregano
- 3-4 tbsp garlic confit oil
Sauce:
- 1 cup garlic cloves, peeled
- Extra virgin olive oil
- 1 cup mayo
- Salt and pepper to taste
1. Preheat the oven to 200°C (390°F).
2. Cut the potatoes into chunks, wash them, and parboil in salted water for 8 minutes. After draining, let them dry for 10 minutes.
3. Combine sea salt, Gochugaru, oregano, and garlic confit oil. Pour this mixture over the potatoes, then bake for 1 to 1.5 hours. Remember to flip the potatoes every 20-30 minutes during baking.
-Sauce
1. Roast peeled garlic cloves in olive oil at 180°C (350°F) for 1 hour until soft.
2. Mash some roasted garlic into mayo, add salt and pepper to taste.
