The best steak I ever had was something I made myself at home. Found a $20 top sirloin that had some picanha still attached. Separated them, dry brine the picanha for 6 hours, and reverse seared it using my air fryer and a cast iron. I'm tearing up just thinking about it.

Reverse sear all the way! Also dry brine! I do this for prime rib (better than steak!). I also cut it off the ribs, tie it into a nice round shape with butchers twine so I maximize delicious crust and it cooks evenly. I cook the ribs in the pan seasoned and separate.

I am so hungry now. I got a smoker last year and reverse searing steaks is the best way to cook a steak by far. So good!

For really thick cuts of meat, I'd go with a sous vide preparation to the desired temp, then sear the surface and serve.

And I'm pretty much with Brian McClellan: the answer is "yes". I like steak with just salt and pepper, I like peppercorn steak, I like steak with noodles, I like steak fried in onions and mushrooms, I like marinated flank steak, ....

See also pizza, except no fish. My favorite is pepperoni, onions, jalapenos, pineapple, and extra cheese on a pan crust.
