SMOKED BEER CAN BBQ CHICKEN

INGREDIENTS:

1 medium/large Chicken
1 can of beer
4 handfuls of woodchips

CLAUDES BASTE SAUCE:
Bbq sauce
Worchestire sauce/soyer sauce
mustard sauce
Honey

RUB:
2 teaspoons onion granules
2 teaspoons garlic granules
2 teaspoons ground pepper
2 teaspoons of any other spices you desire

METHOD:

Soak you woodchips in a shallow container filled with water.
Salt chicken inside and out and cover with plastic wrap and place in the oven for 1 1/5 - 2 hours.
Mix your RUB ingredients in a small bowl
Mix your BASTE sauce ingredients in a container
Wash chicken under a running tap removing all salt. Dry the chicken with kitchen paper.
Rub your RUB ingredients all over the exterior of your chicken
Empty half the can of beer out and poke holes in the top of the can
Place the can of beer inside the chicken, making sure that the chicken's legs, drumsticks act as a support
Ensure your BBQ fire is ready. You want to cook your meat on an indirect heat, so dont place the coals/brickets under the chicken but off to the side or around the edges.
Place a tinfoil container filled with water underneath your chicken in amongst your coals. This will add moisture to the BBQ and ensure your chicken doesn't dry out. It will also catch all the fat drippings from your chicken.
Add your wood chips and as they begin to smoke close the lid of your BBQ
Make sure that the vents of your BBQ are set so that the temperature of your BBQ remains between 180 - 230 degrees Celsius/350 - 480 degrees Fahrenheit.
Continue to add woodchips throughout the process to ensure smoke fills the BBQ.
Continue to add new coals/brickets to maintain the optimum temperature.
Cook your chicken for about 1 and a half hours or until the temperate reading in the thickest part of the chicken thigh reads 77 degrees Celsius/170 degrees Fahrenheit.
Be careful removing the chicken as the beer can and beer will be boiling hot inside.
