Sicilian Pizza
Recipe designed for 12 x 12-inch pan. Slightly larger or smaller pan will work, but crust will be thicker or thinner
Bakers Percent
Water – 79%
Sugar – 2.5%
Salt – 2%
Instant Dry Yeast – 1 %

Ingredients
Flour – 450 g
Water – 355 g
Salt – 9 g or ½ tbsp
Sugar – 11.25 g or 1 tbsp
Instant Dry Yeast – 4.5 g or ½ tbsp

Directions

1. Add yeast, salt and sugar to warm water (approximately 95-100 degrees) and stir until yeast is dissolved.
2. Slowly stir in flour until fully incorporated (about 5 minutes)
3. Cover and let rest at room temperature for a minimum of 1 hour (may be up to 4)
4. Alternatively, you can refrigerate the dough for 3 days
5. Oil 12 x 12 inch baking pan and dump dough out onto it
6. Spread dough gently until you have the pan covered (10 minute rest cycles may be required)
7. Cover the pan and let rest for another hour
8. Top with sauce, covering all the way to the edge
9. Add your choice of ingredients and bake for 20 minutes on oven’s lowest rack at 500 degrees
