To make these Dark Chocolate Pecan Clusters, you will need:
2 cups chopped pecans
1 cup sugar
1/3 cup water
1 teaspoon vanilla extract
1 teaspoon lemon juice
3/4 cup heavy whipping cream
2 tablespoons butter
Cool completely
Mix in 1/4 teaspoon of salt
Pour enough caramel over chopped pecans until the pecans are well moistened.
Place pecan clusters in the freezer for 1 hour.
Cover pecans with 2 cups of melted almond bark dark chocolate. Let the chocolate set, then dip the bottom part of pecans clusters in melted chocolate so the clusters are fully covered.
Keep refrigerated.
