To finely chop shallots, first cut off the top and bottom.
Carefully slice through the first layer of skin and peel apart the shallot – usually there are two lobes inside.
Place one of the lobes in front of you, and slice from north to south, leave a little bit at the top of the shallot so it stays together.
Rotate the shallot 90 degrees and chop finely. This is a perfect size to use in sauces, risotto or salad dressings.
