4-5 lbs chicken
2 lbs salted pigtail
1 teaspoon black pepper
1 teaspoon salt
2 tablespoon Caribbean Green Seasoning
2 tablespoon Olive Oil
1 medium onion
5 cloves garlic
1 scotch bonnet pepper
2 cups diced pumpkin
3 scallions
5 sprigs thyme
1/2 teaspoon smoked pimenton (smoked paprika)
1-2 tablespoon tomato paste concentrate
2 cups coconut milk
3 cups water + 1 chicken stock cube
2 1/2 cups long grain brown par-boiled rice
3-5 pimento peppers
1 teaspoon grated ginger
8-12 taro (dasheen) leaves

My dna is American South, so we use black-eyed peas and collard greens for New Years Eve. The old people use the pig tails and necks but I use smoked Turkey. Thank you it looks Dee-lish !!

Black eye peas is actually my favourite peas and black eye peas PELAU is a trini must for old years night, my dad made the best black eye peas PELAU and chris yours looks amazing. I actually make mine with left over smoked turkey and ham

African American folks eat black eyed peas on new years too, but we eat them the same way we eat them all year round too lol. Imma give them a try to shake things up this year.

Chicken with cured salted pork tails has the nicest flavour. In Jamaica the taro (dasheen) leaves we call Badoo.
