I’m a trained chef. I have made thousands of loaves. When I was young (I’m 70 now) my mum use to make bread every Saturday and it tasted out of this world, of all the bread I have made not once have I made bread as nice as the bread my mum made.

Every Friday I had to go to a specific shop for the fresh yeast. It was made in a large pancheon bole designed for bread making and it was made in front of the coal fire and cooked in the oven heated by the coal fire.

I recently got a new Nutrimill grainmill for Christmas. Let me tell you, the quality of the freshly ground flour makes such a difference in the bread. It has also helped my digestive issues. I know longer have to be on Miralax or Duclolax. I know this might be too much information, but if it helps anybody else, it is worth it. Get a grainmill and grind your own flour. You won't be disappointed because freshly ground grain has a lot more nutrients than store bought flour that has been refined that has the bran and germ removed. Hope this helps someone.

Watching this video was so soothing, especially with all the chaos here in the US right now. Wish I could come spend some time visiting your awesome farm! I do have a bit of Welsh heritage and grew up on a small farm in the middle of Nebraska in the days before corporate farming took over. My mom made an oatmeal bread that I loved, and I still enjoy baking bread😀. I’ll have to try your recipe!

you've inspired me! i used to bake bread every weekend because 1. paying $7 for a damn loaf of bread is unacceptable to me, and 2. i just love the magic of baking bread, the feel of the dough. I'm going to do this this weekend!❤

I love how it's about the mindfulness and love of ingredients, as well as the process of creation. The bowl was too small, one loaf smaller than the other - and that's the natural beauty of it. Thank you so much for sharing all your knowledge, love for food and calm personality in this hectic world. Beautiful. One tip i would give as a baker about kneading - try not to add flour. You could watch richard bertinents videos about slap and fold, he demodstrates how to do it and also explains the process - itll just make your bread even softer and airier..
I admire your home gaz. Gives me lots of inspiration. Also your energy! ❤

I have a daughter with Down syndrome and I am looking forward to make your potato bread, because I really want to get away from store bought bread, but I will try some gluten-free flower instead.

That bread looks unreal! My nan would always peel potatoes with a knife and I never understood how she could do it so smoothly. She looked so cool!

I make this with sourdough (also vegan) with glyphosate and pesticide free ancient grain flours and about 5% olive oil and it comes out soft too, without potato. Sometimes I add in herbs like Rosemary, and/or dehydrated onion in the final shaping/folding.

Have you ever looked into the benefits of fresh milled flour Gaz? I went down a real rabbit hole and got myself a little mill, I’ve not bought shop bread since, it’s so yummy and extra nutritious.
