Good review. I got mine without Mayo, I only wanted oil and vinegar and could not taste the oil and vinegar at all. I could have swore they forgot to put on the sub so my sandwich was very dry.

I worked at a Jimmy John's for 2 summers back in the late 00's, and assuming these things haven't changed.

The meats are a private label Jimmy John's brand. No idea who their partner is in making them. They come into the store looking just like the large hunks of meat behind your grocery store's deli counter, and are sliced in-house on the same kind of slicer you'd see in the grocery store deli - they also use this slicer on the veggies. The meats could be sliced anywhere from that morning to maybe a day or 2 in advance. The bread, at least in my day, was not par-baked but came to the restaurant as frozen sticks of dough that just needed to be thawed, proofed, and baked.

I think by default they add the red wine vinegar to it in heavy excess and don't do hots. I personally can't stand when places throw mayo on italians
