DIY Making a Stone Mosaic Stepping Stone

We are currently redoing our side yard, and part of that is making some mosaic paths. This stepping stone will become part of a larger mosaic walkway.

Have you seen the videos made by an Italian woman who places the stones down first in whatever pattern, and then covers with concrete/latex and then flips it over, cleans the face of design, and then usually seals it with a varnish or clear coat? I am wondering what difference is? I want to create a stone area and In not sure which method is going to be durable enough and just hoping to understand differences - less trial and error, less waste of material!!!! Thanks! And great job on this!
