Leslie - fresh ginger is always the best, so my suggestion is when can find a piece of ginger root in the grocery store - buy it and then if you don't use it right away (or even if you do), what's left put in an airtight freezer bag and freeze it. Later, when you need some ginger, it's very easy to "grate" the amount you need in the frozen form.
