Additional steps are required to avoid iTunes error message about untrusted certificate:

Go to Charles' menu "Help > SSL Proxying > Install Charles Root Certificate > Install a certificate... > Local computer > Put all certificates in the following store > Browse > Trusted root certification authorities > OK > Finish" (wording may be slightly different).

There is a simpler way to install older version (though this is only for the last compatible version and it does not always work):
1. Disconnect the iOS device from your computer;
2. Download the latest app version in iTunes (error if device is connected as this version is not compatible);
3. On your iOS device, go to "App Store > Update > Purchased";
4. Select the app you added in iTunes and click on the cloud download icon, a message "Download an older version of this app?" appears, click on "Download".

We've all been there before, wishing you could downgrade to an older version of an app. It doesn't happen often, but when it does, this can be a life saver.

I think apple dosen't allow people to download older apps to try to force people to get newer devices. Total BS that you cant just download older versions. This is a great fix, thank you.

This is awesome, it worked. Thank you very much! I also believe that you are using an older version of Charles which means that some of the names have been changed; for example 'edit' is now 'compose'. No biggie because its still really easy to find the new names

The current version of iTunes (12.5.1) gives errors about failing to make the secure connection.

The only "solution" I found was to go back to iTunes 12.4.3 -- downloadable from Apple (go to Apple's site and search for "itunes download"), but you have to have root privs to move/replace the iTunes app manually, and you also have to either rebuild your iTunes library or at least move your newer iTunes library info out long enough to do this stuff (which then makes a new, empty library), then move your old library back when done… If you don't know what you're doing, I wouldn't recommend all this stuff. But if you do -- and most people messing with proxies here will probably be fine -- it's a bit annoying, but not too horrible.

Also, the new version of Charles (4.0.1) acts differently than this video shows. Editing the response doesn't work the same. I was sort of able to make parts of it work, but I finally just went and downloaded 3.11.6 and used that instead.

So if people who know more about the proxy process and editing the request-response process can figure it out, updated instructions (for Charles 4 and iTunes 12.5) would be nice.

But thanks for putting this out! Using the older versions of iTunes and Charles, it was very helpful, and I was able to get some specific previous versions of an app.

THIS (Sorry for my english) August 2017. This works. If you have problems with itunes, then go and read Haadii's comments. If you can't find Response button, now it's called Contents. When you are going to save the xml file the format is chlsx, doesn't matter, open the editor (brackets) and open the file. And if you can't find "edit" when you press right click on buyproduct, then select buyproduct and up there you can find a button with a pen on it: that's "edit".

Something else with iTunes (but not 12.7!!) :
Download an app from App Store
After that, go to the App Store on the iPhone and clic on update, then purchased.
the App you download on your computer appears, clic for download and it will say : your iphone is too old but you can download the last compatible.
It's done ! I've just download garageband and firefox with my ios9.3...

Oh my god. You have no idea how thankful I am for finding this video. One game creator ruined their game with screwing up the cloud save. So my data was there, but couldn’t get to it. Through this, I went back literally one update and now I have my data once more. You saved me because they refuse to listen. They claim it’s Apple, when this definitely proves, no it’s them.
