Sweet & Sour Szhecuan Steak

Szhecuan peppercorns are a unique addition to any sauce and they really shine when used as a steak seasoning. I'd recommend playing around with the spice levels and enjoying a few different preparations, but it's hard to go wrong with a dish like this...just be careful making it too spicy. Bon appetite!

Ingredients:
1- 2 inch thick cut NY steak (12-14oz)
1 yellow squash
1 zucchini
2 tbsp Szechuan peppercorns, coarsely ground
1/2 cup soy sauce (1/4 cup for sauce)
2 garlic cloves, minced
1 whole orange, zested and juiced
1/2 cup rice wine vinegar
2 tbsp honey
2-3 dried cayenne peppers

That looks so amazing! I usually avoid sauces with my steak, preferring just a seasoning rub and some butter to finish it off, but that sweet & spicy sauce sounds like it’d be a perfect flavor to compliment the steak. Yellow squash is just about my favorite vegetable (although I realize it’s actually a fruit), but I’ve never marinated it like this before so I’m definitely going to try this out!

My entire face is numb just looking at all those peppercorns, but it does look great! I make garlic fermented honey that I bet would be good in that sauce.

Chef, very nice recipe & the only thing i will change is i prefer a ribeye vs a ny strip, plus a twiced baked potato & salad for sides, plus the squash
