Ingredients
Makes 6 servings

White Chocolate Raspberry Mini Domes Insert
2.5 oz (75g) white chocolate
2 tbsp (25g) whipping cream
6 fresh raspberries

Chocolate Almond Biscuit Dome Base
6 tbsp (80g) butter , chilled
2/3 cup (70g) ground almonds
1/4 cup (50g) brown sugar
1/2 cup (60g) all-purpose flour
1/2 tsp (2g) salt
2 tbsp (16g) unsweetened cocoa powder
1 ½ tsp (7ml) water

Raspberry Mousse
9 oz (250g) raspberries , fresh or frozen
1/3 cup (70g) sugar
1 tbsp (15ml) lemon juice
1/2 tbsp (5g) gelatin powder
2 tbsp (30ml) water ,
1 cup (240g) whipping cream , 35% fat

For Decoration
freeze dried raspberries
chocolate decorations

You had me at Raspberry anything! Beautiful workmanship with the molds. Straining the seeds from raspberries is such kitchen torture but so worth it in the end. Most times I make a cheesecake I will top it with a raspberry glaze and it really is the perfect fruit dessert.

This could also work with biscuit joconde cut into rounds and a chiffon as the mousse as chiffon filling is like your mousse recipe, but made with fruit curd thickened with gelatin like your raspberry mousse instead of butter and folded into meringue instead of whipped cream.

Hi, simple question, you are using 250g of rasberries for the mousse, you then strain it, meaning you lose weight from the seeds. I am using raspberry puree, how many grams should I be using as I wont be losing weight as I won't strain it.

I'm shocked you didn't temper and fold the raspberry and whipping cream with a spatula! Did the consistency of the mousse remain stable cause of the gelatin in the raspberries? I've always used a spatula out of fear of breaking down the air in the cream but I haven't made a mousse in ages at this point.
