I don't think you should take away the stage choice.

It was an elemental counter pick, sometimes almost as important as a character pick.

Other times competitors would deliberately stand their ground on a disadvantageous stage to show their courage or their strong mentality.

Lastly it would mean that if Bandai Namco chooses to release dlc stages they would always to a small degree change balancing if they favor a certain type of character. It would also mean that we cant really have any super crazy stages, because they would appear more regularily through random pick.
