I learned only this year (from Sohla!) that the reason we alternate wet and dry ingredients is that the batter is an **emulsion** and adding to much liquid or too much dryness at one time breaks the emulsion. Baking really is a science!

Made this cake this evening and it came out perfect!!! This is a really great recipe! The cake came out nice & beautiful! Very tall cake, smooth with perfect texture/flavor. So glad it was in my feed. I appreciate the tips as well. Cake was moist and just perfect. I had tried other recipes online (not his)and they were no where near as good as his recipe. The cream cheese evens out w the butter. Other recipe that I tried from online not his of course, was all butter and too much of it was not good. This recipe was Definitely a nice even consistency and not a heavy cake.

I made this for for a combined Mother’s Day and birthday celebration. Turned out very nicely. I used European butter. Topped with chocolate covered strawberries. Nice, big, dense cake. I used a couple tablespoons less sugar, I couldn’t find kosher salt so I used a teaspoon of Himalayan. Added a bit of vanilla bean paste and Nielsen Massey extract. Thank you, John!

I made this yesterday and it’s so good, I follow your instructions word by word BUT I did add like 1-2 tablespoons of oil because I lost some butter as I was mixing it and it came out so moist and nice and I can’t stop eating it!!!
