The torch guy in the intro is actually Ocato the Imperial Battlemage. In Morrowind, if you oust the Archmage Trebonius in a peaceful way, you get a letter from Ocato.

I like how Arthur's working class bumpkin dad is a medically-trained magician with a passing knowledge of Daedric and Giantish and is pals with the Emperor.

The Daggerfall Unity people did a really good job of upscaling the intro video. It's my favorite intro video for any game, even though it's just two guys in cosplay garb, one a serious actor and the other just some guy. The actor playing the Emperor really sells it and his lines are very iconic.
I also like the room with the desk, candles and Daggerfall book. I've bought candlesticks and candles over the years to recreate the mood. I used to light all the candles before playing Daggerfall. These days my cat would knock them over and my dog would eat them.

~ 1:10:00 The reason, the ebony dagger works so much better than the other weapons, even though it's damage is not that high and your skill in short blade is not even close to your skill in blunt weapons, is its material bonus to the Hit probability. Iron weapons have - 10%, steel + / - 0% and ebony weapons +40% to hit probability. Since one skill point equals +1% hit probability, using a ebony weapon has the same effect as having 40 more skill points. (Weapon skills do not increase damage, contrary to what original ingame descriptions might say.)

In your example you had from material and skill:
0% (steel material) + 6% (long blade skill) = +6% hit chance with steel broad/long swords sabers, ... (so you were right to disregard all long blades)
40% (ebony material) + 8% (short blade skill) = +48% hit chance with the ebony dagger (so you were right in your initial choice of the ebony dagger)
0% (steel material) + 35% (blunt weapon skill) = +35% hit chance with the steel flail
-10% (iron material) + 35% (blunt weapon skill) = +25% hit chance with the iron mace (so you were wrong in changing to the iron mace at 1:16:54)

Besides skill and material, also agility(attacker - target), luck(attacker - target), -armor(target), -dodging(target), +/-swing type, ... influence the hit chance.
Total hit chance can never go below 3% and above 97%.
If the numerical hit chance from skill and material is high or even above 100%, this can help to hit targets with higher agility and/or luck than you, high dodging, high armor, etc.
So Daggerfall has the somewhat strange game mechanic, that armor does exactly the same as doding, high agility and luck. All just reduce the chance to get hit, not the damage.

E.g. skeletons warriors have 80 agility, you had 60 in this instance. This further decresased your hit chance. By (60-80)%/10 = -2%. So counterintuitively, the skeletons in Daggerfall are early on easier to kill with a ebony dagger wielding, short-blade skilled, agile, lucky rougue, than with a strong, heavy hitting, mace wielding warrior or knight. Stupid game design, in my opinion.

In the lycantrope dungeon, it was btw great luck, that you found the elven mace, since lycantopes are immune to iron and steel weapons.

Combine the following mods to really blow up the world size:
* Basic Roads
* Travel Options
* Realistic Wagon
* Airships
* Hidden Map Locations

With these mods you will add roads to the overworld which can be followed to get from place to place, disable the instant fast travel forcing travel via roads/boats/airships, and make your wagon/horse a real object that you need to take care of instead of just a bag-of-holding. Instead of getting a map full of cities you will start out with an empty map and markers will get added when you discover or are told about a location. This really slows down the travel and makes the "How" question of traveling a real concern. If it takes an hour to change region by following the roads at 20x speed, you start looking at doing things like teleportation for far distances/renting an airship/using a boat/etc. Also since traveling on foot is no longer instantaneous you will need to plan out the inns you want to stop at because sleeping on the overworld isnt as safe.

Then throw in some mods to spice up the overworld like:
* Wilderness NPCs
* Distant Terrain
* Mountains and Hills
* Fixed Dungeon Exteriors
* Wilderness NPCs
* Warm Ashes - Dangerous Dungeon Exteriors
and you'll be able to experience a Daggerfall that feels 100x larger
