I agree with panteleon...when the coffee starts to rise, we call it "before it turns over" stop the boiling.If you do that you will expereance a really full cream.

My first purchase when I got home was a briki and portable burner so I can make them during breaks at work. Never been to Starbucks or tim Hortons since.

Great approach for what normally people drink.. there are variations of course, based on the ratio of coffee/sugar...there are 7 ways ways of making it..1. sketos..like shown in the video...next is vareez gleekos, or 2. heavy on coffee and sugar, 3. heavy metrios..heavy on coffee but medium in sugar, or 4.heavy with little sugar..me oliyee, and then there is 5. light in coffee and sweet, 6. Light in coffee and medium in sugar.. or 7..light in coffee and light in sugar... enjoy!

We do the same coffee in Bulgaria, then it is called old coffee and in Turkey, then it is called, yes you got it.
They make it the same way in Ethiopia, Morocco, etc.

Oh yeah. Panagiotis RULES!!! Whenever my sisters and I would make Greek coffee for my dad, we would see who could pour it without breaking the foam layer on top...😄

It's always been a hit or miss with me making Greek coffee. It's not as easy to make as it looks in this video. Store bought, I prefer Bravo because I think it's lighter, but when I'm in Greece, I buy fresh ground from the neighborhood shop like you do. My ultimate goal is to be able to make it with no sugar
