For those who are genuinely wondering how, it's most likely just his tolerance going up over time. He started drinking to cope with the loses of his colleagues and partners, and he drank more and more each time, so now it's to the point where he's mostly desensitized to the effects of alcohol but still likes it.

His contract are with the Knife devil and a few others, he's seen surviving falls off buildings with no significant damage, so its likely one of his contracts allows him to be ALOT more stronger then the average human hence why his liver is able to withstand the alcohol, could also be why he's not getting drunk as easy

So the way the characters supposed to be explained in the real world is 2% of the world population have the opposite effect when they get inebriated they can break down the alcohol and it gives him the effect of euphoria not only that because of this they can keep drinking for a lot longer than most people
