Allam Pachadi | South Indian Ginger Chutney | Allam Pachadi for Idli Dosa by Priyanka Rattawa

Allam Pachadi or Ginger chutney is Andhra's popular Ginger pickle which goes well with many south indian dishes like paserattu, idli or dosa.

Ingredients-
2 tbsp oil
1 tsp Cumin / Jeera
2 tbsp Chana dal
1 tbsp Urad dal
1/2 tsp Mustard seeds / Rai
1/4 tsp Methi / fenugreek seeds
5 Dry Red chili
Curry leaves
1/4 cup ginger / adrak
1/4 cup tamarind pulp
2 tbsp jaggery / gud
salt to taste

How to make it-
1. In a pan heat oil,add Cumin, chana dal, urad dal, methi seed. Roast for 2 minutes on low flame.
2. Add Ginger,red chili and saute on low flame for 3-4 mins until its golden brown..
3. Transfer the mixture to the blender. Add in jaggery, salt and tamarind pulp.
4. Blend to smooth paste adding more water if required.
5. Heat oil in a small pan. Add in mustard seed and curry leaves.Allow to crackle.
6. Transfer the tempering over the ginger chutney.
7. This ginger chutney can be served along with paserattu, idli or dosa.
