That chicken taco soup is the best soup I've ever had in my life

In the summer I take advantage of the bell peppers and good onions and celery.... I use my food whizzer and process chunks of the veg into fine fine chop... Drain and then pack into freezer bags and stack in the freezer. Mash the bags fairly flat and then during the winter you break off whatever size chunk you desire. I put it in everything I can!
Many many times I also add carrot to it... Everybody needs a little bit of carrot in life!
Its so good to have summer freshness in the dead of winter when bell peppers are up to $5 a piece...
Just clear the kitchen table and set up and take an hour and make a whole bunch!
I do the same with an over abundance of tomatos... With or without onions and peppers...

I love the pot pie recipe! I’d take my cooked biscuits and split them then put one on the bottom of my serving bowl and add my pot pie then top it with the lid. If you used a small bowl it would kinda be a pot pie!
