I think I recall reading that in Legends, his original lightsaber crystal actually manifested as purple. But he was already struggling to fit in with the rest of the Jedi Order, and having an irregular lightsaber color would only make things worse. So he willed the crystal to manifest as a regular blue color instead. Later in life he stopped caring about fitting in and chose to stand out with darker colored robes, but it just goes to show how much pressure was on him at a young age that he literally had to hide his true colors.

He was a warrior. He loved the war culture he was raised in. Unlike most of his peers, he excelled in combat and military strategy. He had no problem with the idea of being focused on dueling and being a General.

This is the in universe lore reason. The real reason is because in ANH, Ben gave Luke a Blue saber that belonged to his father.

Green is for councillors who rely of negotiations and only use their weapons when needed. They also can use the force more freely

It's tradition. Blue sabers are associated with Guardians, who preferred to hone their fighting skills. Greens were used by Consulars, who were mostly negotiators or strong Force users. Finally, yellows were for Sentinels, who worked as undercover field agents, having all kinds of skills, sometimes for situations that other Jedi never even considered would occur. All of this, however, could be ignored in favor of preference. Also, saber colour does not have anything to do with the attuned users personality or connection to the Force: it depends wholly on the crystals structure.
