Was feeling really down (im a guitarplayer and all of my gigs got cancelled) and didn’t have anything to do except feel sad. Then I saw ur video and decided I was gonna make this. This is my favorite way to use up leftover veggies and meat during the Fall, Winter and early Spring. And you're right, that dusting of parm is non-negotiable!

Pretty much whatever soup/stew/casserole you cook will almost always taste better the day after you cook it. Don’t know why this is true but it is….. in my opinion. Great recipe, you can’t go wrong with minestrone

I love the segments of you prepping the ingredients. Watching the vegetables get perfectly chopped, hearing the subtle sound of the knife meeting the board, the chill music in the background, all so professionally lit and colorful is so satisfying and peaceful. Thanks for the support for Italy, my family lives in Sardegna, where the situation is a little less worse than on the main land.
Also in the Netherlands, where i live now, we have very strict rules and restrictions, restaurants are empty, people are getting completely paranoid. We ourselves had to postpone the opening of our restaurant.
Great idea teaching people how to make something from nothing, some don't realize what delicious and nutritious things they can make from leftovers, things they have in the fridge and pantry.

I made this as my Christmas dinner last night - It was SO delicious and just when I thought I knew what it was going to be like, I added the parmigian to the serving bowl and chopped parsley - and it went to yet another level.
It's hereby declared that this is a keeper and a new favourite of mine.

I just made this soup, and it's amazing! 😋 I didn't have pancetta, so I substitute with bacon, and i also used dried thyme instead of fresh. The parmesan olive oil drizzle is a must. So good. I can tell it will be even better the next day. If it lasts that long, HA!
