☕️ About this recipe:

This is a nice simple muffin recipe that’s whipped up in a few minutes then it’s straight into the oven.

We learnt how to make strawberry muffins in Bologna, Italy from our favourite chef Roberta. Working from her treasured handwritten recipe, we soon whipped up a batch of these unassuming little muffins in their sugary dust jackets.

Fresh strawberries in muffins are such a good combo, it’s a wonder they’re not more popular. The crumb on these is so delicately crispy on the outside and moist on the inside, it’s all you want in the perfect muffin.

🥒 Ingredients:

150 g plain flour / all purpose flour / 1 heaped cup
125 g white sugar / 3/4 cup
8 g baking powder / 1 ½ tsp
1 egg
½ tsp vanilla essence
½ cup milk / 125 ml / 4.2 oz
25 g butter softened / 0.88 oz
8 strawberries chopped into small pieces / around 1 cup

I just made these although I did tweak it to suit my families plant based lifestyle. I used 1 flax egg in place of the egg, oatmilk in place of the milk and plant based butter in place of the butter. I also added the zest of 1 lemon and a teaspoon of lemon juice (the juice I added to the oatmilk prior to mixing everything together to make plant based buttermilk). I baked at 425 for 5 min to get a nice rise, then I reduced to 350 for another 30/35 min (I made large muffins) until a toothpick comes out clean and the tops are golden. I did end up broiling the tops until golden. I highly highly highly recommend adding the lemon juice and zest. Best strawberry muffins I've ever had. Yum! Def keeping this one! ❤️

Deliciously easy to make...best muffin recipe bar none! I found your recipe this morning and whipped up a batch. I'm impressed. Thank you for sharing. My days of searching for a reliable, tasty muffin are over😊 footnote: since finding this recipe, I've made several batches, sharing with family. Most recent batch, I used 2 1/2 mashed bananas and 1/3 cup mini choc chips, yummy and so moist. thanks again for sharing this recipe!
