Hello everyone!
Today, I want to share how I cook Amasake at home in Cambridge!
Amasake is a fermented/sweetened rice drink, enjoyed by Japanese people for a long time.
Usually, we drink Amasake with cold/hot water.
I recommend you to replace “Sugar” with “Amasake” in your daily cooking!
Once you cook Amasake, you can use it for about 1 week if kept in the fridge.
You can also keep it in the freezer for about 1 month.
[Ingredients]
- 150g Rice (Sticky rice)
- 200g Dried rice koji
- 360ml water (for cooking rice)
- 360ml water (for lowering the temperature of the cooked rice)
[Instructions]
1. Soak the rice for at least 30 minutes with 360ml water
2. Cook the rice in the pan (or in a rice cooker if you have one)
3. Lower the temperature of the rice with 360ml water
4. Add rice koji if the rice becomes around 60℃ (The enzyme of rice koji will be broken if over 60℃!!)
5. Put it into the sealed bag and keep it under 60℃ for 6-8 hours
6. Make it smooth with a blender if you prefer
