Week of Cozy Drink Ideas. (vegan & comforting)

An amazing way to celebrate the fall/autumn season is by making a bunch of cozy drinks!! Yes some of them are iced, I couldn’t help myself.
Most recipes take 5-10 min, some require a little prep, but are so fun to make regardless!

Ingredients & Notes 🌟
#1 Pumpkin Spice Chai Latte 0:23
1-2 tbsp cardamom pods (whole or crushed)
⅓ tsp cinnamon or a few cinnamon sticks
Optional: 1 tsp cloves, 1-2 star anise, 1 small piece ginger…
2-3 tsp brown sugar (or to taste)
1-2 bags of black tea (depending on taste)
~ 1 ½ cups (375ml) hot boiling water
1 tbsp pumpkin purée
1 cup (250ml) oat milk, warmed (frothed if desired)
→ serves 2
#2 Pink Moon Milk 1:30
1 cup (250ml) non dairy milk
½ tsp vanilla extract
¼ cup (60ml) tart cherry juice
1-2 tsp sweetener (optional)
dusting of cocoa powder for the top (optional)
→ serves 1
#3 Banana Bread Cold Brew 2:16
for the banana bread syrup:
1 banana, mashed
½ cup sugar (100g)
2 tbsp maple syrup
pinch of sea salt
2 tsp vanilla or 1 packet vanilla sugar
1 1/4 tsp cinnamon
pinch of nutmeg
1 cup (250ml) water
for the drink:
ice cubes
1-3 tsp banana syrup
cold brew coffee*
oat milk
→ I like this ratio: ¾ coffee, ¼ milk but it’s up to you!
*for the cold brew, mix:
30g coffee, coarsely ground (⅓ cup)
½ cup hot water (125ml)
1 ½ cup cold water (375ml)
Lasts in the fridge for up to 10 Days?
#4 Banana Bread Chai 4:09
1 black tea bag
1 tbsp banana bread syrup (or to taste)
¾ cup hot water (180ml)
¼ cup oat milk (60ml)
*serves 1
#5 Homemade Apple Cider 4:30
4-6 apples, quartered
1/3 cup (65g) brown sugar
1 1/2 tsp cinnamon
1/2 tsp allspice, whole
1-2 tsp vanilla bean paste
1 handful cardamom pods
5 cups water (1250ml)
juice of 1/2 lemon (optional)
→ simmer on low for 2 hours, with the lid on, but make sure it has a whole for the steam to escape!
→ serves 3-4
#6 Pistachio Milk 6:04
80g unsalted pistachios with shells on (¾ cups)
→ without shells they should be ½ cup in volume
pinch of salt
2 tbsp agave syrup (or to taste)
2 cups (500ml) water
*If you go for roasted pistachios, expect a slightly roasted, slightly savory flavor. I didn’t mind that, but a safer choice is to go for unroasted / unsalted pistachios!
**Use a cheesecloth that you put over the fine strainer, when straining the milk!
SERVE HOT:
heat 1 cup of the milk, add 1 dash of cinnamon, more sweetener, if needed, OR:
top with sweetened whipped soy cream and more cinnamon.
→ serves 1
#7 Pistachio Iced Matcha Latte 7:19
ice for the jar
1 shot of matcha (1 tsp matcha powder + 1 tsp agave + hot water, whisked w a bamboo whisk)
pistachio milk
whipped soy cream
→ serves 1
#8 Spicy Hot Chocolate 7:33
75g semi-sweet chocolate chips (½ cup)
3 cups oat milk (375ml)
1 ½ tsp cocoa powder dissolved in ⅓ cup water (80ml)
1 tsp tonka/vanilla bean paste
1 tsp cornstarch dissolved in ⅓ cup water (80ml)
1 dash of cayenne pepper (start with a pinch, add up to ¼ tsp)
whipped soy cream for serving, or vegan marshmallows!
→ serves 3-4
