Dark oak gives apples.
Jungle is much taller and therfore more wood.
The only advantage to spruce is it looks nice, which is a very valid reason.

Chopping down these huge oak trees is literally a nightmare, so when there's no spruce yet, I prefer birch

I only have a spruce tree farm because
1. I need a lot of spruce planks
2. I live in an oak forest
3. The nearest spruce forest is 2000 blocks away

the problem with this is the leaves overlap, so you get a diminishing return of saplings for every tree you grow

You're forgetting about the apples from the oak farm. That alone makes it way better because you can farm wood, leaves, sticks, and apples for golden apples.

I've done this with jungle trees and dark wood dark wood takes longer though because you have to space them out but for jungle trees you don't and get a lot more wood and a fancy looking door

No dude. Dark Oak. It had the highest apple drop rate and the wood looks the best.

I did a wood mine once. It was so satisfying to have such a massive structure that built itself. But cleaning it up when i was tired of it was a nightmare. I do miss it though.

I remember doing this recently to build a big house out of spruce on a mountain. It took me an hour to get all the spruce logs from at least 5 or more 2x2 spruce trees. In the end I got about 18 stacks of spruce logs.

Unless you’re using wood for design and want different things other than spruce

If you want to farm oak, I recommend to height restrict their growth by placing a block or slab above the potential tree.
If the tall trees are obstructed, it forces a smaller tree to grow.
Sounds counterproductive, but it’s much easier and faster to farm shorter oaks in bulk than tall trees.

Everyone else is saying “oh, but this tree gives more wood” or “oh this tree drops apples” meanwhile I’m just wondering why you wouldn’t farm ALL of the tree variants
