Beet Salad with Yogurt Dressing
You'll need
3 red beets
4-5 tablespoons olive oil
5 tablespoons strained yogurt
2 tablespoons mayonnaise
1/2 teaspoon salt
1 clove garlic
1 can corn (220 grams)
1/2 cup crushed walnuts
1/2 bunch dill
For the top;
Olive oil
Crushed walnuts
1 cup = 200 ml
Here's how
Begin by peeling the beets and finely grating them.
Heat olive oil in a pan over medium heat. Add the grated beets and sauté until they become tender and release their moisture.
Once the beets have softened and the liquid has evaporated, remove them from the heat and allow them to cool.
In a separate mixing bowl, combine yogurt, mayonnaise, salt, and crushed or minced garlic. Mix until you achieve a smooth and creamy consistency using a whisk or a fork.
Add the drained canned corn, chopped walnuts, finely chopped dill, and the cooled beets to the yogurt mixture. Stir well to combine all the ingredients.
Transfer the salad to a serving platter and smooth the top.
Drizzle some olive oil over the salad and garnish with additional chopped walnuts.
Your yogurt beetroot salad is now ready to be served. Enjoy!
