I made this back in July, and I just now bottled it yesterday (so, about 4 months fermentation, settling, and maturing time) and it is out–of–this–world fantastic. I used 1 navel orange, 2 cracked-apart whole cloves, 1 stick cinnamon, a pinch each of nutmeg/allspice, 25 raisins, and that's it..besides the Fleischmann's yeast of course. Amazing how simple the recipe is and how fantastic it tastes. I'll be making this one again.

great video, just doing my 2nd batch after the first one came out great. make sure you sterilise everting before you start.a few things to note for fellow UK watchers- I used normal bread yeast rather than the one mentioned in this video as that brand doesn't seem to be available in the UK. also in the UK a gallon is bigger so add more of everything.

One thing to note is that the harsh orange peel taste mellows out after letting it sit for a few months. Im enjoying a glass of this as we speak, without the raisins, i hate raisins.

What was the alcohol content % of this brew once it finished?  Great video, can't wait to give this recipe a go :)

So I made one similar to this. I used a lot of honey and I high ABV tolerance yeast. It came out super potent and was absolutely disgusting even when I back sweetened. Way to strong taste like Canadian mist mixed with bourbon.

I read alot of brewers rerack their mead to clarify it. Is re racking unnecessary for this recipe? Also is it ok to open up the must to taste test the progress of the mead or will this ruin the batch?
