I grew up eating stuffed cabbage, pierogi, and halushki. My great-grandparents came from Slovakia and Prussia, so my mom made a lot of eastern european dishes. I love that there's a wfpb version!

My boyfriend made sort of a hybrid between this and your cabbage soup. No fresh fennel, but I grow bronze fennel, so the seeds took it from good to great *chef’s kiss*. It’s been awesome, leftovers for days!

Very good! I was even lazier and didn't cook the cabbage mixture on the stovetop! Just mixed everything in the baking dish and baked for about 30 minutes.

I loved how quick this was with already cooked rice in the fridge but I thought it was just okay. I grew up eating polish cabbage rolls and mom made the tomato sauce a sweet sour one with cider vinegar and some brown sugar. She also spiced the filling with dill, thyme and sweet paprika. Will definitely make again, just amp up the seasonings. Tastes better second day

Ooo we make deconstructed cabbage rolls all the time.. we use fresh dill and a little lemon
But the cashew cream baked .. this is a glow up

Made this yesterday - absolutely delicious. I used sunflower seeds instead of cashews for the cream sauce. This will be in my rotation - so easy and so good - and yes I grew up eating cabbage rolls - these are better! Thank you WYW !
