Ingredients:
Sticky rice
Cucumber
Carrots (I used pre-shredded)
Avocado
Extra-super firm tofu
Soy sauce
Ginger powder
Garlic powder
Corn starch
Nori
Plant based mayo
Sriracha
Sesame oil
Sesame seeds

As usual, almost everything in this dish is OPTIONAL. If you don't like it, don't add it to your bowl.

☆ Rice - I made my rice in the instant pot. Rinse thoroughly and put your rice in the instant pot with equal parts water. Set to pressure cook on high for 3 minutes. When it is done, let it sit for 10 mins before manually releasing the steam. For my husband, toddler, and myself, I cook 2 cups of rice.
☆ Chop cucumber, carrots, and avocado to your preferred size. I prefer everything small so I can mix it up and enjoy with a spoon.
☆ Tofu- cut into thin slices and press the water out with paper towel or a kitchen towel. If you buy super firm, you can skip this step. Cut into small cubes. In a bowl, add soy sauce, ginger powder, and garlic powder. Again, to your liking on the soy sauce and depending on how much tofu you need. To 1/2 block of tofu, I add 1 tbsp soy sauce, 1/2tsp ginger powder, and 1/4tsp garlic powder. Once mixed, I added 1 tsp corn starch and mixed again. Fry in EVOO or avocado oil until your desired crispiness.
☆ Yum Yum Sauce - so simple. For mine (enough for 2 bowls), I did 1.5 tbsp plant based mayo, 1tsp sriracha, and 1/4tsp sesame oil

On top of your rice, add cucumber, carrots, avo, prepared tofu, and cut up nori (I had to use scissors). Drizzle... or plop your Yum Yum sauce on top, drizzle a bit of soy sauce, and add sesame seeds for garnish (and added nutrition).
