Ooh yes I’ve grilled quite a few bison tomahawks.. I found that using pecan & cherry wood chunks really complimented the sweeter flavor of the bison more so than hickory or oak.. but that looks delicious!! 🔥

The smell of vacuum sealed meat always a little farty when you open it up.

You could soak it in lemon juice for a bit then pat dry add a thin layer of peanut oil and then dry season and then cook as normal. I think it gives a the perfect texture taste and smell

Wife and I buy chopped bison meat for burgers. We buy it because it's so lean and healthy. As for taste, it's just as good as beef but a little different. Not in a bad or good way, just a little different.

It's fascinating how small the tomahawk steak compared to regular cows is even though bison is bigger than them cows. Probably because it's leaner but still incredible

i actually prefer bison to beef when and if available. the texture is a little better and overall the flavor is better and cleaner to me.
